Mostly Cheddar (Tillamook Extra Sharp), but sliced Ham or Bacon layered with it. Of course if I want it really good, I use Flour Tortillas with Pepper Jack Cheese and left over Pork, Chicken or Beef and some Green Chilies sprinkled around.

What kind of cheese do you prefer for your grilled cheese?  I like thin sliced "real" cheese of some kind like Colby jack or muenster but my son like his dad before him likes American cheese.

Something I saw on food network.  You put about 5 kinds of cheese in the middle and you spread butter on outside of bread and press shredded real parm cheese in to the butter before you grill it.  Idr what they used on the inside because I use my own diff cheeses I like best.  Not healthy at all but it is really good.
That sounds so good! I think I'll have to try that. I never thought about putting parmesan in the butter.

Oo, I haven't had one of those in a while, I think I know what I'm having for lunch today :p  I never did get fancy with it, "real" cheeses are good of course but easy Kraft singles will do me just fine.

Block cheddar cheese the one where you have to cut it yourself, Though my nieces enjoy the thin american cheese ones.
