Corn beef and cabbage
« on: March 07, 2016, 11:38:03 am »
I'm not Irish, but I do make corn beef and cabbage every St Pattys Day.  I always cooked it with potatoes and carrots in the oven.  My one friend got me a pressure cooker for Christmas (never had one), so I think I will try it in that this year.  Does anyone have a pressure cooker, what do you think about them?  I'm a little scared to use it, but I'm going to try!

They are easy to use, just read the instructions that come with it,  and be sure not to leave a high fire under it after the steam on the petcock comes up or you will blow the rubber ring on top and stuff will go all over your kitchen. and be sure to let the steam pressure go down before trying to open it. because if you try to force it might get hot and I mean hot food all over you. I used to take it off the stove and run cold water on the lid to be safe. And what ever you do  not do what my 13 year old did and that is put bean (pinto) and sardines in to cook because  when you open the lid you will have little skeltons floating all ocer the beans. Now the reason behind this  was his dad liked sardines (yuck) and pinto beans together.  needless to say they went to town to eat. I taught my boys at an early age to cook and not be afraid to tweek things. Guess I did too good of a job. Laughed my fool head off when he called me to tell me what he did.

That sounds really delicious. Just thinking about it puts me in a festive mood for St. Patrick's Day. My grandmother used to have a fantastic recipe for corn beef and cabbage. It might be time to dig it up again.

I don't have a pressure cooker and never have because like you I was a little fearful of it.  My grandmother used one all the time though and swore by it.  Said it cooked things faster and more tender than you could cook any other way.  I will be making corned beef, cabbage, potatoes and carrots but I am not sure how I will prepare it.

We have corned beef and cabbage for New Year's Day.  I'll eat the cabbage but I don't like the corned beef.
Have a wonderful day!

Pressure cookers are the best! I recommend cooking some collard greens in there, you won't regret it.

We buy 5 or 6 Corned Beef Briskets every St. Patrick's season and cook them throughout the year. No rush though, just putting it in the slow cooker for 3 hours then add the potatoes for an hour, followed by sliced carrots and finally cabbage wedges the last 15 minutes. Always works fine for us.
