What are you cooking today for dinner?

I am not sure what I want to eat, I do not feel like cooking. I may eat some soup since it is so cold outside.

Today it will be tilapia with lemon butter and white wine sauce with a side of wild rice with scallions. I also thought about making a beef stew with sherry. You really can't beat a hearty stew for the winter and for easy leftovers.

We are having hot dogs. They were on sale for 2/1.00 haven't that price in years.

I roasted a whole chicken, mashed potatoes with gravy, corn, salad, and chocolate cake.

We are having leftovers. I made green chili chicken enchalidas for supper made a large dish yesterday. they are just as good the second day around, and will have a large green salad with them. Nothing like green chili. You can make so many dishes with it.  Of course it a staple here in New Mexico.

I am making a pork slow roast. I used one large roughly chopped onion on the bottom of my crock pot, then I placed the pork roast on top which was sprinkled with salt and pepper. Then I added a couple of chipotle peppers, two cans of diet soda (you read that right) and a couple of tablespoons of sugar. I left this to cook in my slow cooker for about 6 hours and by the time it was cooked and the juices had mixed with the soda, it had a wonderful flavor. It's a real easy drop and go recipe which I have used many times.

We stopped at Subway on the way to work.  They have the special "all footlong subs only $6.00" the whole month of February!  What a deal!
