That sounds delicious. Your post just made me hungry. If you're worried about being slightly more health conscious you might go for some reduced fat sour cream and scale back the butter some. You could try adding some diced tomatoes on top to add a little flavor. Just some ideas to consider.

You are right, potatoes are good , it makes it fatten to put everything on it.  I love my sour cream, my butter, chives, and bacon and cheddar cheese.

Everything in moderation is good as long as you enjoy your food.

I don't think is lessens the nutritive value but for sure adds up the calorie value.  Guess it depends on what else you have for dinner/lunch.  If it is the potato with toppings only, well, 500 cal is 500 cals no matter how you eat it!  I also love baked potatoes but I only add butter and salt which is, I suppose, not the healthiest thing either.

They're healthy if you don't overload them with too many unhealthy toppings.

Baked potatoes are healthy especially if you also eat the skin.  What makes it unhealthy is all the extra toppings like butter, sour cream, and bacon.

I try avoid carbs so I avoid bake potatoes, but it's hard because they're so good.

Yes, Baked Potatoes are absolutely loaded with nutritional goodies. It is sadly the stuff that we add to the potato that doesn't as such deplete the nutritional content of the potato, but rather lessens the overall quality of the meal. For instance, you can add butter and cheese to your potato or you can add olive oil and ham. Baked bean are also a great addition to baked potato as is cottage cheese, tuna and sweetcorn.
