Artichokes are fabulous - especially when you stuff them (I use some bread crumbs that have been seasoned with grated parmigiano cheese, salt, pepper, basil) and then I like to add small slices of Italian cheese in between the leaves. Then I take them put them in a big pot, add enough water to come about half-way up the artichokes and let them cook until done. You can tell when they are done by sticking a fork in the heart - if the fork goes in easily - time to enjoy!!!!!
