I've been wanting to lose weight for a while and keep trying and getting discouraged by people.  I keep telling people that I just need to add more veggies into my diet and I think I will start losing weight.  My veggie portions are too low right now, so I want to raise them.  The minute I suggest this to people, their suggestion is to eat rice and beans.  I've heard that makes protein, so that's good if true, but how is this more veggies?  I was hoping for a suggestion like, "make a big pot of chili and fill it with <list of veggies> and beans to cut down the meat ratio and you'll have food for a week" but I seem to get just really bad suggestions or suggestions I'm already doing (like don't snack/cheat, exercise more, eat less, duh).

I don't get people who, it seems, try to sabotage your work.  I don't know if they mean it or not, but it's just so unhelpful.

So, do you all have any good recipe ideas that are veggie heavy? 

My main veggies are lettuce, non-cooked spinach, broccoli, cauliflower, peppers, tomatoes, onions, green beans, navy and pinto beans, garlic, mushrooms, carrots, water chestnuts, pea pods, and small amounts of jalapenos.  Any recipes where these feature would be appreciated.

Below are some things I make, any additional veggies for those would be helpful.

Chicken fajitas with onions, every color pepper, shredded lettuce, tomatos, guacamole, sour cream, and a little cheddar cheese.  I've heard people add garlic, but haven't figured out a way yet.

Chicken Enchiladas with onions, green peppers, jalapenos.  Wrapped in flour tortillas and topped with cheddar cheese.

Bean Burrito with pinto beans, jalapeno cheddar cheese, lots of salsa, lettuce, sour cream.  Wrapped in flour tortilla.

Chicken stir-fry with pea pods, pineapple, carrots, water chestnuts.  Brown rice as base.

I have a TON of veggie heavy recipes.  Just look up 1) Lo Carb recipes (adjust as needed but most will have lots of meat, lots of veggies) and 2) Vegetarian dishes (then just add meat anyway).  I really wouldn't know where to start with sharing recipes, I have so many.  I've been trying and collecting them for 10+ years.

I have noticed that lately everybody seems to be an expert on my life.  And I don't tell people I want to lose weight because they just start about how skinny I am.  I am NOT skinny.  Just because they need to lose more than me doesn't mean I don't need to lose weight.  As for what to eat everybody and every program tells you something different.

The only way to lose weight is to burn more calories than you take it.  Eat a balanced diet.  Eat fruits, veggies, and protein (meat or beans or whatever).  Exercise every day.  Cut out wasted calories like from colas.  And drinking diet colas is bad too because the artificial sweeter causes the same reaction as sugar in your body.

the only way i no how   to lose weight is to eat healthy things like salad seafood and try to stay away from red meat i stopped eating the red meats and lost 30lbs i bake or broil my meats also that helps and i walk every other day

What I'm trying right now is the Special K challenge. I can't really help you when it comes to eating healthy because I didn't eat that healthy I just worked out a lot. One thing I can tell you is to not let anyone discourage you. I've had people do that to me before and you just have to ignore all of the negativity. At the end of the day you're doing this for no one but yourself. Good luck!!

It's usually easier to just start adding fruits and vegetables into the meals you already enjoy

I love doing green smoothies. You can add any leafy green vegetable along with your favorite fruit and liquid of choice to mask the taste

Replacing the bread you normally having with vegetables is an easy way to add a serving or two of vegetables to your diet

There's a site called recipe matcher that lets you put in the ingredients you have on hand and gives you a list of recipe. It's a good way to discover new ways to eat you favorite vegetables

There isn't anything worse than trying to be on a diet and having to deal with people who are so negative. I have also done extremely well with the Special K Challenge. I absolutely love this one because you don't starve yourself. I have to watch everything I eat because my system is alittle slow. SHOOT! sometimes I feel like I gain weight just walking by some food or reading a food label. It gets very discouraging sometimes. I was so glad to find the Special K Challenge!!! ;D

The best way is to do it yourself - don't listen to everyone else cause they will all have different opinions and views and what works for them may not work for you.  I find portion control is important, as well as how your food is cooked.  Protein should be included in all 3 meals every day and should be no more than 1/4 of your plate.  The remaining 3/4 should be split with 1/2 vegetables and 1/4 carbs.  Try to hook into something like "My Fitness Pal" where you can log everything you eat - no matter if it's a meal or a snack - cause this program will tell you exactly how much protein, fat, carbs, sugar, etc. you are consuming and don't forget to exercise - very important!!!!!  Good luck!!!!!

yes don't listen to negative people. what I do is I don't drink soda or sugary juices and try to walk. I would cut out the meat but I love turkey. also I stay away from starches.

Eat veggies, fruit, chicken/turkey for protein, and drink lots of water. That will definitely help you lose weight.

The best recipe I can give to you is one my brother in law gave to me, and he's lost about 100 lbs. Firstly he blends up carrots, celery and onion in a blitzer, adds some garlic and salt and then lightly sautees this in olive oil. This is a good flavor base for so many recipes. He adds lean ground beef and some water, chopped tomatoes and boils this, reduces this down and continues the simmering/reducing down for about 2 hours. He adds just quarter cup of wine and soon you will have the most gorgeous home made ragu for spaghetti. I would add wholewheat spaghetti. Good Luck. You're doing great!

lol That's how I feel! Or sometimes I'll crave something (junk food) and once I buy it I feel like I'm already gaining weight lol so I end up not eating it. I've been on the Special K diet for a week now and already lost 3 lbs. I also started working out with the Wii Fitness. Glad that the Special K Challenge is working for you.  :)
