anyone have any good dinner ideas???

im just tired of cooking the same meals for my family.....just wanna try something different and break away from the norm.....please help save my family from boring meals!  :wave:

Homemade chicken quesadillas are pretty easy to make and they are good.

hmm.. bubble up pizza?

you'll need:
  • 1 jar of your favorite spaghetti sauce.
  • 1 small can of black olives.
  • 1 pkg of pepperoni.
  • 1 bag of shredded cheese, your choice.
  • 3-4 small cans of biscuits.
    or if you're using the jumbo ones, two cans will work.
  • 1 onion.
  • 1 bell pepper.

  • (note: most ingredients are optional, just use what you like on your pizza ;p)

    you'll need a rather large mixing bowl.
    and baking pan/dish (i usually grab a 9x13.)

    • pre-heat to around 350 or so.
    • cut your biscuits into quarters and put 'em in the bowl.
    • add your sauce and 'topping' ingredients,
      setting aside a cup or so of your cheese.
    • mix everything together.
    • spread into your greased pan.
    • top with remaining cheese.
    • then stick it in the oven for around 30-35 minutes.

    i always make this for parties and get-togethers and it seems to be a pretty big hit overall.. plus it's a really kid-friendly recipe ^_^

This is a great post. We are always cooking different kinds of latin foods because we both grew up eating them all the time. :/  I can't wait to see what other people eat.

or maybe ranch chicken?

you'll need:
  • boneless, skinless chicken *bleep*.
    (of course the amount will depend on the size of your family ;p)
  • 1 packet of dry ranch mix.
  • a few tablespoons of self-rising flour..
    (the amount of flour needed will vary,
    depending on the amount of chicken you have.)

and all you have to do is:
  • cut your chicken *bleep* into cubes/bite size pieces.
  • mix your ranch and flour up in a bowl.
  • drop your chicken pieces into the flour mixture and make sure they're covered.
  • fry 'em up in a pan with a bit of oil.

it's pretty much just a tasty twist on fried chicken pieces ;p
but i love making this.
i usually pair it with plain white rice.
and green peas on the side.

it's pretty great.

never heard of bubble up pizza...but im willing to try....an if anyone has any latin or spanish recipes i would love those too!  im getting hungry now!! ;D

I have a huge book of recipes from my great grandmother, all handwritten so it's kind of cool. She was from and lived in Spain. I'll start posting some of the recipes if you guys would like them.

This recipe for crab quiche is made with crabmeat, swiss cheese, eggs, and nutmeg.

Ingredients:
1 pastry shell (9 inch), partially baked
1 tablespoon butter
2 tablespoons shallots, minced
1 cup crabmeat
1 tablespoon flour
1 1/2 cups Swiss cheese, shredded/divided
3 eggs
1 cup half and half
1/2 teaspoon salt
dash white pepper or hot pepper sauce
dash nutmeg
minced parsley
Preparation:
Have a 9-inch pastry shell partially baked. Saute shallots in butter until tender, about 2 minutes; mix with crabmeat and flour; set aside. Sprinkle 3/4 cup the cheese in the pie shell, then spread with crab mixture. Sprinkle with remaining 3/4 cup of cheese. Beat eggs, cream, salt, pepper, nutmeg, and parsley until mixed. This isnt my own recipe, I found it on a site years ago and have been making it since, it's my boyfriend's favorite!

Yield

8 servings
Ingredients

    * 1  (1 1/4-pound) eggplant (about 4-inch diameter), peeled
    * Cooking spray
    * 1/4  teaspoon  salt, divided
    * 1/4  teaspoon  freshly ground black pepper, divided
    * 2 3/4  cups  chopped fennel bulb (about 1 large bulb)
    * 2  cups  finely chopped yellow onion
    * 2  cups  trimmed arugula
    * 1  teaspoon  white balsamic vinegar
    * 1  teaspoon  extravirgin olive oil
    * 1  cup  quartered cherry tomatoes
    * 1/2  cup  (2 ounces) crumbled goat cheese
    * 2  tablespoons  chopped fresh basil
    * 1  tablespoon  chopped fresh thyme

Preparation

Prepare grill to medium heat.

Cut eggplant crosswise into 8 (1/2-inch-thick) slices. Lightly coat both sides of eggplant slices with cooking spray; sprinkle with 1/8 teaspoon salt and 1/8 teaspoon pepper. Place on a grill rack coated with cooking spray; grill 7 minutes on each side or until browned. Set eggplant slices aside.

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add fennel and onion; sauté 8 minutes or until vegetables are tender and lightly browned.

Combine remaining 1/8 teaspoon salt, 1/8 teaspoon pepper, arugula, vinegar, and oil in a medium bowl; toss gently to coat. Divide arugula mixture evenly among 8 appetizer plates; top each serving with 1 eggplant slice. Arrange about 1/3 cup fennel mixture on each eggplant slice; top with 2 tablespoons tomatoes and 1 tablespoon cheese. Sprinkle the chopped basil and thyme evenly over cheese.

think you could substitute something else for the goat cheese?
i've never liked it for some reason :/

SHRIMP AND CRAB AU GRATIN

Ingredients
1/2 cup (1 stick) butter
1/2 cup all-purpose flour
1/2 cup whole milk
1/2 cup dry white wine
1 lemon, juiced
Salt
1/2 teaspoon black pepper
1/8 teaspoon cayenne pepper
1 pound small or medium shrimp, peeled and deveined
1 pound claw crabmeat, picked through for shells
1 1/2 cups grated sharp Cheddar
Directions
Melt the butter in a heavy-bottomed saucepan over very low heat. When the butter is completely melted, stir in the flour with a wooden spoon. Cook for about 1 minute over low heat, stirring constantly. Slowly add the milk. Using a whisk, stir briskly until you have a smooth sauce, about 2 minutes. Add the wine, lemon juice, salt, black pepper, and cayenne and whisk again. Switch to the wooden spoon and keep stirring the white sauce until it is completely smooth and thickened, about the consistency of mayonnaise. Remove from the heat.

Bring 2 cups water and 1/2 teaspoon salt to a boil in a medium saucepan and add the shrimp. When the water returns to a boil, cook the shrimp for 1 minute. Drain immediately. Roughly chop the shrimp and put in a large mixing bowl. Add the crabmeat and, with your hands, toss gently to mix.

Pour the sauce over the seafood. With a large spoon, gently combine, taking care not to break apart the crabmeat.

Spray an 8-inch square disposable aluminum foil pan with vegetable oil cooking spray (there will be a little left over for a tasty lunch for the cook) or use an 11 by 7-inch casserole dish. Pour the mixture into the pan. Place the grated cheese on top, completely covering the seafood mixture. Wrap the uncooked casserole securely with plastic wrap, the with aluminum foil. Place the pan into a plastic freezer bag and seal. Freeze. Prepare a label with these instructions: Completely thaw in refrigerator. When ready to bake, remove the foil and plastic wrap. Bake in a preheated 350 degrees F oven for about 25 to 30 minutes, until bubbly. If serving immediately, bake in a 350 degree F oven uncovered, for about 25 minutes, until bubbly.
