As much as I love to cook, I must confess that my receipe box is not nearly as full of cake receipes that I'd like. Anyone  have some quick cakes (besides box mix lol) that I can whip up? And is it true that the 2-egg cake is: 2 eggs, 1C sugar, 1 stick of butter and 2C flour sifted?

I can't cook, but I can bake!  I have a super yummy recipe that's a bit of work, but well worth it. I don't know that I would feed it to the little ones though...

Apple Spice Rum Cake Recipe
1     cup chopped pecans or walnuts
1    pkg yellow cake mix (the kind with pudding in the mix)
3    eggs
1/2    cup cold water
1/3    cup vegetable oil
1/2    cup Bacardi dark rum (80 proof)
2    cups apples
3    tbls sugar
1    tsp cinnamon
1/4    lb butter
1/4    cup water
1    cup granulated sugar
1/2    cup Bacardi dark rum (80 proof)
Directions

   1. Peel, core and chop apples into small pieces.

   2. Mix together with 3 tbls sugar, 1 tsp cinnamon. Let sit.

   3. Preheat oven to 325 degrees.

   4. Grease and flour 12-cup Bundt pan.

   5. Sprinkle nuts over bottom of pan.

   6. Mix yellow cake mix, eggs, cold water, vegetable oil, and Bacardi dark rum.

   7. Pour batter over nuts alternating layers of apple mixture and batter.

   8. Bake 1 hour. Cool. Invert on serving plate.

   9. Melt butter in saucepan.

  10. Stir in water and sugar. Boil 5 minutes, stirring constantly.

  11. Remove from heat. Stir in rum. Stand back-the rum goes a little crazy when it hits the hot glaze!!

  12. *bleep* top of bundt cake and spoon/brush glaze evenly over top and sides.

  13. Allow cake to absorb glaze. Repeat until glaze is used up. FYI this step takes a long time. If you have a syringe, use it. Make sure you take the time to use all the glaze.

Just got a great receipe from my Grandmother last night and bake it.  It was delicious, but you use box cake mix.  She called the Coal Miners Cake

1box Devil's Food Cake Mix
2 Eggs
1/8 Cup Oil
1 can Cherry Pie Filling

Mix all ingredients and bake on 325 for 30 - 35 minutes.  I live on top of a mountain so I bake it on 350 for about 30 minutes.  (The altitude affects the cake).

For the Icing:

1 cup sugar
1/4 cup Evaporated Milk
1 cup Chocolate Chips
1/2 cup to 1 cup of chopped Pecans or Wal-nuts
1 stick of butter

Put sugar, milk, and butter in pot and bring to a boil.  Boil for 1 minute.  Remove from heat and add chocolate chips and nuts.  Pour icing over the cake after cake has cooled.  This cake is awesome.
