Normally we do a decent little spread kind of like a smaller version of Thanksgiving.  This year there is some family in town that isn't usually in town so I am sure I will be with them but I don't know exactly what we will do.

HAPPY EASTER EVERYONE!  I will have dinner at my house. Ham veggies, cookies and drinks(no alcohol), Every year I invited 3 special people to my house for ALL the holidays. They live alone and have NO family around. They do nothing for holidays. I LOVE helping people and giving them whatever I can to help them out even if I have to go without for a little while. I am so lucky because I LOVE to bake and cook and everyone loves me for that and Loves my food... I bake almost every day in the winter and have noone to give it to so I will give to the shelters, VA places, or even the nursing homes and schools. They love it and I enjoy it!

I am in charge this year to make the dinner. Well I took on the responsibility of the supper and dessert as my mom is very ill. I will be making 2 whole chickens, carrots, mashed or roasted potatoes (have yet to decide), peas and a salad. I will start off with a cheese platter, olives, mini croissants and grapes. Also as an antipasto I will make a cream of broccoli soup. I am quite excited for the task ahead of me today. It will be a little work but I am looking forward to it. Especially as it helps my mother out. I also have 2 separate Easter tradition desserts to make too. One is with ricotta cheese and the other is with a type of parmesan cheese. Mmmmm, my mouth is drooling just thinking about eating all of this tomorrow...mmm

Almost done with all of my prep for tomorrow.  Made cinnamon raisin bread from scratch.  Made some brioche rolls for tomorrow.  Got all my veggies cut up.  We are making a turkey, so all the prep I do today takes a load off for tomorrow.

We are not having guests or company, but I wanted to make a turkey anyway. :D

We had Easter Dinner at our house.

My husband baked the ham and made mashed potatoes and baked beans.
I made the cheesecake.

2 of our 4 kids and families were able to come home.

We had wings and leftover ham from Christmas (it was gross).  And I made some cranberry sauce, which was delicious.

We didn't have a traditional Resurrection day dinner, but it still pretty good overall. We had salmon croquettes, creamed corn (the creamed corn had fresh corn added to it) and mustard greens. We didn't have much available since it's towards the end of the month. I hope next time we'll be able to go out to eat though.

For me, Easter Sunday was just another day.  No cooking.  Made a sandwich and had some chips.

My husband was great enough to cook dinner for us yesterday for Easter.  We had fried pork chops, rice, and wheat biscuits (I put them on because he doesn't like to put butter on them).  He finished off his butter pecan ice cream last night, but I still have mine.  I will put a dent into it today.  He called me to find out what we were having for dinner today.  I told him there were 4 pork chops left and the biscuits, so he is planning to cook his favorite, yams (sweet potatoes) to have with his pork chops.
