I love turkey with sharp cheddar as well. If I'm doing only the cheese I love the smoked cheddar.

My favorite sandwich meat is roast beef.  Love roast beef sandwiches with a bit of cheese and lettuce.  When I was little my dad took me to a place in Buffalo, NY for roast beef on kimelwick.  Several years ago they visited that same restaurant for a PBS program called "Sandwiches You Will Like".  Cool.

Mine is Liverwurst on white bread with lots of mayonaise and maybe some ripe tomato. YUM!

My single favorite would be ham, but I prefer a sandwich to be a mix of several meats, like ham, turkey and bacon.
