If you thinking of a healthy side dish try baking Beets instead of potatos to make french fries  :wave:

 :binkybaby: Don't knock it until you've tried it I always say.  Can't imagine beets as a potato replacement for fries but you never know.  I tried mashed cauliflower instead of mashed potato's once but it just didn't quite make it in my opinion.  Thanks for the idea.  :dontknow:

  I love Potatos cooked or made any way you want!! I doubt I would enjoy having beets instead of Potatos

You can probably julienne the beets, toss with a little olive oil, maybe some bread crumbs and bake them for a french fry substitute.  Personally I like beets, but I wouldn't cook them this way.  There's a Ukrainian recipe where you dice them and combine them with sauteed onions, garlic and mushrooms that's very good.  :thumbsup:

On the other hand I've tried making french fries out of sweet potatoes and that works.  I recently learned that you can "bake" potatoes or sweet potatoes in a crock pot.  I only want one at a time so I probably won't have use for this trick, but she rubbed her sweet potatoes with chili powder and squeezed lime juice on them before eating.  I never liked sweet potatoes until I tried them recently with lime juice and chili powder.  (That's pure ground chili or cayenne pepper, not TexMex style chili powder.)  Now I want them all the time.  ;D

Beets are high in folic acid (great for pregnant women), potassium, calcium and antioxidants!!

The greens contain significantly more iron, vitamin A, potassium and calcium than the roots.  And can be used/cooked just as you do other leafy greens.

Beet juice is rich in natural sugar, sodium, sulphur, chlorine, iodine, copper and vitamin B1, B2, C and bioflavonoids. I have tried baked baby carrots w cinnamon, nutmeg and a few dops of I Can't Believe It Is Not Butter.  So YUMMY!!

Also, zucchini and sweet potatoes.. Regular potatoes are not good for diabetics.. So I have been looking for alternate veggies  :thumbsup:
