It depends on what I am eating.  I perfer yellow american on my hamburgers, swiss in my chilli and pepperjack on my roastbeef sandwhich.

Cheddar, the sharper the better.  Most any will do, though.

Mmmmmmm cheese. I like Swiss (real Swiss), provolone, Colby jack, mozzarella, & cheddar. Smoked cheese are good too, like smoked cheddar. I can't eat a lot of cheese though.  :-

I like colby, mild cheddar and velveeta cheese and also jalapeno which is my favorite.

Provolone is the best. Swiss is also good. But nothing beats provolone if you are going to eat a grilled cheese sandwich, provolone is the only option.
