Do you happen to know how to fix cabbage rolls? I tried years ago and gave up.

I can help with that.  I'm half Ukrainian, grandma made them all the time.  We call them holobtsi.

Take one head of cabbage and blanch it in boiling water to soften the leaves.  As they soften pull them off and set aside.  I usually have to keep returning it to the water to continue blanching the inner leaves.  When your leaves are all softened cut out the heavy part of the vein.  Set aside the veins, stem (quartered lengthwise), tiny inner leaves and the dark outer leaves.

While your cabbage is blanching you can make the filling.  Cook one cup of barley (rice may be substituted but barley is more flavorful).  Combine the barley with one pound of lean ground beef (you can use turkey, but it's quite bland) and one large yellow onion, chopped medium-fine.  Season with 1 clove chopped garlic (or equivalent of powder) and 1 teaspoon of salt.

Prepare a large pot, like a 5 qt. dutch oven, that can go into the oven, by using the stem pieces, veins and tiny leaves to create a protective layer on the bottom.  (Keep the dark outer leaves for later.)

Next place some of the filling on one of the leaves (about a serving spoon for larger leaves, less for smaller leaves), then roll it up.  Take the stem ends and fold them across the filling, then fold the opposite side across that.  Gently smooth out the sides and fold one then the other over the top, snugly.  Place the roll in the pot with folded ends down.  Fit the rolls snugly to the each other to keep them from undoing.  When all the rolls are in the pot pour 2 cups of beef boullion or consume over them.  Use the dark outer leaves to make a protective layer on top.  (This may burn, but your holubtsi will stay safe.)

Bake at 350 for 1 hour.  Serve hot.  May need salt at the table.  Traditionally my family would cut a slit and insert a slice of butter.

Grandma served them with pumpernickel bread, tossed salad, kolbasa (or ham) and mashed potatoes or pirogis.  Enjoy.

i would appreciate knowing some good tasting recipes on a budget and something that doesnt take too long to make. im a college student and i dont really like spending too much time on food, but that forces me to be a "ramen person" which isnt too good for my health :|

I seriously think you should write a cookbook and get it published and when you do, I would like to buy the first copy and have it autographed please.  You're the ONLY person that has ever given me recipes that I can actually do without smoke or making a BIG mess.  I make your other recipes all the time: "Grandmother's German Pancakes", "Banana Bread", the "Battered Fried Chicken Recipe"...you're the BEST!
