The secret in good cooking for me is all about seasoning and marinade.
Alot of people know how to cook but not all know exactly what to put in there food, you have to know exactly what goes
with what.
I love for the food to have flavor, I cook with celintro alot. Celintro, basil, rosemary and capers are realy good with chicken.
Steakes are realy good with basil, bosamic vinegar, and use a mixture of spices such as; grillmates seasoning.
Always use a little olive oil with meat and chicken, you can also cook with white wine for chicken and seafood, and red wine for
red meats.

The secret to good cooking is always washing your hands before preparing a meal. Sanitation is key when it comes to cooking.

When in doubt, keeping it simplicity is always helpful.  Good old salt, pepper, and sugar (some people are always surprised by this, but it just makes things less acidic).  Usually when I marinate any type of meat (even chicken I throw in a bit of soy sauce, salt, pepper, sugar, and maybe Korean bulgogii, but it's not necessary.

Find someone with no sense of taste or smell, and if you're cooking looks especially nasty, impaired vision also. >_<

In all seriousness though, I'm a horrible cook and I can only make a sandwich or just fry everything lol, I will be following the tips in this thread.

You need a set of great knives and great pans....and every other great appliance lol...I would be lost without the quality cooking equipment.

Knives and pans make a world of difference.
Before I got married, I had a pieced together thrift store smattering of pots and pans and a very cheap kind of all purpose knife.

We registered for Calphalon pans and Heikals knives and my gosh, it really does make a huge difference.

Another thing people don't realize is the water you use. We switched from city water to a reverse ossmosis water filtration system and food just tastes SO much better without all of the harmful chemicals and addatives that are in the water system.

As far as everything else, lawyres makes some amazing 30 minute marinades that go great on all kinds of different foods. For something simple like say boneless, skinless chicken *bleep*; take the chicken poke a bunch of holes in it with your fork and then put it in a ziplock bag for 30 minutes or so with some of the marinade. Take it out and grill it either on a grill pan inside or a traditional outside grill. 4 to 5 minutes a side on an outside grill over direct high heat and you have a wonderful chicken breast.

We use our gas grill almost year round even in the snow last year. I don't mind the cold and I feel we get much better meals from it. I grill all kinds of things though and when you start using for more than just burgers you'll realize how much potential it has. I even did my thanksgiving turkey on it this year.
