Pumpkin Pie Pudding Shots

On a different thread (What are you doing this weekend) I had mentioned that I was going to be experimenting on developing a new treat just in time for Turkey Day: Pumpkin Pie Pudding Shots. I made a few batches over the past weekend (and took some to karaoke for my friends to try out) and after the rave reviews from my friends, I thought I'd share the recipe with my FC friends too! Let me know what you think! Also if you know of any good T-day recipes you want to share!

Pumpkin Pie Pudding Shots

1 Package Cheesecake* Instant Pudding (4 servings size)
3/4 Cup Milk
1/2 Cup (4oz) Fulton's Harvest Pumpkin Pie Cream Liqueur
1/8 Cup (1oz) Spiced Rum (like Captain Morgan)
1/8 Cup (1oz) Vodka or Vanilla Doctor McGuillicuddy
1 8oz (by weight) container Whipped Cream (like Cool Whip)
1 graham cracker, crushed (I also added extra allspice, nutmeg, cinnamon, and clove to this mixture)

Whisk (or using electric mixer) pudding and milk together until smooth (note that the pudding will try setting very quickly with this low amount of milk, so don't spend too much time mixing here). Pour in alcohol and continue mixing. Fold in whipped cream and mix until smooth. Pour the contents into a gallon-sized ziploc bag, and seal the bag, trying to squeeze out as much air as possible. Cut off a small piece out of one of the bottom corners of the bag, and squeeze pudding into "jello shot" plastic cups (2oz cups works best). Sprinkle the top with the crushed graham cracker mixture. Cover with a lid and store in the freezer for at least an hour before serving. Makes about 20 2oz shots.


* Note: I have heard that there is a Pumpkin Spice pudding, although I have not found this flavor myself and so have not tried it (and it may actually be a little too much pumpkin / spice flavor so it might actually not work as well). White Chocolate and vanilla flavors would also work well for this.

wow, that sounds dielishis. Im so down with that sickness!  I always make homemade baileys. Let me share that recipe....this if for a blender full to the rim
Baileys for the holidays
3 Cups wiwindsor
5 tbs chocolate syrup
1 egg
3 to 4 tbs real vanilla extract No imatation
1 Can sweetened condensed milk
Add milk or water to fill to the rim.
I acually went to a peir one imports an d grabbed bottles that corked on top and gave for xmas gifts! Enjoy

That sounds delicious.  I love regular pumpkin pie.

If  any of you guys like pumpkin pie, I think it is gross. I do not like the taste of pumpkin pie especially turkey. I do not like thanksgiving because it sounds like I'm eating some yucky pumpkin pie and some nasty turkey. But the only things that I like about thanksgiving is the mashed potatoes and the corn with green beans and some cornbread.

That sounds great! I think I might have to get my wife to make those for me one night. It will have to be a night where we can get a babysitter, so that doesn't happen to often, but they sound wonderful!
