This is a favorite of my family. Pretty easy to make.

Chuck Wagon Tortilla Stack
1 pound hamburger
2-3 garlic cloves, minced
1 can (16 ounces) baked beans
1 can (14 ½ ounces) diced tomatoes w/green chili’s, undrained
1 can (11 ounces) whole kernel corn, drained
¼ cup barbecue sauce
4 ½ teaspoons chili powder
4-10” flour tortillas
1 ½ cups shredded pepper jack cheese
Shredded lettuce, chopped onion, sour cream, chopped tomatoes (optional)

In a large skillet, cook beef until meat is no longer pink; drain. Add the garlic, beans, tomatoes w/chili’s, corn, barbecue sauce and chili powder. Bring to a boil. Reduce heat; simmer, uncovered, for 10-12 minutes or until liquid is reduced.
Coat a large deep skillet with cooking spray. Place one tortilla in skillet; spread with 1 ½ cups meat mixture. Sprinkle with 1/3 cup cheese. Repeat layers three times. Cover and cook on low for 15 minutes or until cheese is melted and tortillas are heated through. Cut into wedges. Serve with toppings of your choice (optional items).

I love crispy, crunchy things, but most are full of salt and fat, BUTTTTT I love the Ryvita crispy cracrkers. They make a variety of flavors from different grains. Lots of fiber. Very low fat. Very low carbs. Almost No salt. I top them with many various things. Tuna salad, Egg salad, Cream cheese and orange marmalade, mustard with ham, mayo with lettuce and tomato. The possibilities are endless.

What can you dream up??

:) Basically..."Avoid all junk foods"...in the long run they are expensive and not good for you! Design a sensible diet that include vitamins and minerals supplements.

I'll eat pretty much anything and be happy, but my favorite is seafood.  I hate cooking, so I have no recipes to contribute.  I'd much rather have people cook for me  :)

get bread that is shaped in a giant sphere ish thing. cut out a hole in the top and dig out the insides [neatly]. melt some brie with an oven in the hollowed out bread. cut up the insides you dug out into little dipping pieces. add some garlic if needed and enjoy. great for family n friends. Also its fun to have the actual bread bowl once the brie is finished

OH MY GOD, How Much Fun Is That? I have been eating junk food for over 60 years and I'm still doing fine and I will eat more tomorrow I'm sure.

I have a ton of food allergies plus lactose intolerance, so I can't have the things I really love...I've had to continually over the years modify almost everything.

if I could still eat what I wanted?  cheese.  anything with cheese in it.  pizza, calzones, lasagna, mozzarella sticks, garlic bread with cheese...*wipes the drool off my chin

I love to eat healthy. Salads, fruit, vegatagles and a little meat. But I also occasionally love a good dessert ;)
