What's for dinner?

I went to Kroger yesterday and bought a pork roast to make pulled pork. I rubbed it and left it in the fridge over night. I found a slow cooker recipe for pulled pork so I just put it on for tonight. I think I will make fried potatoes and fried apples tonight to go with it. I MAY invite my boyfriend over as he love pulled pork. What are you having?

I made pork ribs in the slow cooker and a carrot slaw.  Turned out very nicely!

Today’s recipe is a delicious and easy recipe for spicy stuffed steamed eggplant It has a deep, savory, spicy flavor and is a great side dish for rice. The eggplant is soft and a little sweet, and if you like spicy food I guarantee you’ll be eating the sauce right out of the bottom of the pan after the eggplant is done! : )

I got a steak n' cheese sub with cole-slaw on it for lunch.  The restaurant is called "Belly Busters" if that tells you anything I can only eat half at a time so I guess I will eat the rest for dinner.  They are so good.
