Should this be reviewable?

No.  Some interference calls DO get missed, but there are already so many things getting reviewed it is starting to get ridiculous.  Catch or not; breaking the goal line plane or not = okay.  But when they start reviewing penalty flags it won't stop.  If pass interference is reviewed, why not holding calls?  And you can argue that holding occurs on more than 50% of plays, so are we going to review every single play now?  I know that is not what you are saying, but that is a logical extension of where it might lead.

If they still limit the number of challenges a team can issue, I don't see why the game would have any more challenges than they already do. Since pass interference is one that often leads to big plays, I think it might be a good idea. The whole point in allowing challenges is to prevent the officials from dictating the results of the game, and because a pass interference call could definitely swing the results of the game, I think it'd be important to ensure that there is no mistake in the call (or lack thereof).

I wish they would allow the players to play a bit more and get rid of the ticky-tack contact where they throw a flag.

I wish the referees were perfect but making the pass interference reviewable will only prolong the game. My guess you could call it on almost every pass play if you looked at each receiver.
