I like to get a variety of vegetables every day and mostly I like to "dry roast" them and keep them in a tupperware in the fridge so I can have them whenever I feel like it!

   I like to eat as many as I can every day.  I can really tell the difference when I am not eating right.  We have a big garden so I eat a lot fresh out of there during the summer and fall.    We always have lots of tomatoes, radishes, lettuces, green beans, squash and we are trying artichokes this year.   We usually have so much that I freeze lots of everything.  I try for a minimum of 5 vegetables a day.

During the garden season I have fresh vegetables everyday some times twice day. Sometimes I'll have a meal of green beans, snow peas, and broccoli.  During non-garden season I don't eat many vegetables because grocery store vegetables are not that great....personal opinion.

I like to eat at least one veggie a day, usually at dinner, but I have been juicing a couple times a week.  Then I get LOTS of veggies in me! =)

I love all vegetables. I don't think I have ever eaten a veggie I didn't like. I particularly like to roast them in a little olive oil and salt as they turn out chewy and caramelly! Sweetcorn simmered in a little butter and sugar is devine. Sweet potato roasted in olive oil and rosemary is so fragrant and flavorful. Mash is very comforting, brocolli or cauliflower done with a little cheese is tasty beyond belief. Don't get me wrong, I do like meat also, but veggies are so versatile.

I definitely don't each as many vegetables as I should as I have always been more of a meat eater than veggie lover. There are a few veggies that I like such as spinach, cabbage, romaine, and one of my faves zucchini. I just bought a spaghetti squash and some zucchini the other day for the purpose of getting myself to eat more veggies. I want to be a healthier me by this time next year.
