How many of you make elderberry jam, juice and jelly? I have been doing it for years. last year was not good at all cuz the birds got to them first so this year we have been out watching for them to ripen every day and nothing yet. I love elderberry! Hope this year is like 2 years ago. I made enough for 2 years! now I am glad I did because of not getting any last year.  Yummmmm!

I've never made elderberry, but I did make peach, plum and nectarine jams.  They were all good.  I had to combine the peach and plum recipes for the nectarines, but it worked just fine.  :thumbsup:

I have elderberries huge bushes in my backyard and in my neighborhood.  They are a medicinal herb.  I tasted them sweet-blackberry-like, but too much seed, jelly would be wonderful.  I love to watch the birds love them more than I expected.  Like I know what the movie "The Birds" feels like.  I really really wanted to get a cam on my cat when harvest time, because he goes outside when he wants.  My cats is on hunt mode but don't charge at them, he is a bird watcher, he gets his body very flat on the ground, acts like he is very scared.  I Never Seen That Before.   My honeybees goes nuts on the bark of the tree and the blossoms.  Makes my honey to taste wood--but--very good in a cake recipe, and cornbread even fry steak. 
Wow thanks for BLOGGING about the elderberry bush, in my  :heart: this plant is one of the wonders of mother nature.

Oh it has been a long time since i made elderberriy jeam and jelly. It is so hot and dry where i live they won't grow. And what you buy (if you can find it )in the store is just not the same.I rarely eat jelly or jam but once in a great while i like a little bit with toast. Oh well maybe i can get my aunt to send me a jar for hubby he has never ate it.

 :thumbsup: you are welcome. I do not eat any jams or jellies UNLESS it is elderberry! And MMMMMMMMMMMM   The smell while making it makes my house smell just wonderful!! cant wait for weather to start wood stove so I can bake and cook off all my veggies and stuff! My house is just so refreshing and makes me happy when I bake on wood stove!

We love elderberry jelly here it wonderful, have not had any for several years will have to see if I can find any on the farm this year.  They make real great  sweet and sour chicken.
