How to make the perfect boil egg?
« on: April 22, 2010, 10:57:02 am »
Just in case you may want to know how to boil the perfect egg, it's simple really!  Boils eggs in a sauce pan of water for 15 minutes.  Let them sit in the water until they have cooled off.

I was taught (seriously, they taught this to me in college).  Start with cold water.  Put eggs in cold water, cover the pan and bring to a boil.  When the water starts to boil, turn off the heat.  Let the eggs sit in the boiling water for 22 minutes (you may need to adjust this for altitude, higher altitude takes a minute or two longer.)  Then rinse the eggs in as cold water as you can.  Just run the pan under the tap and let the water run until the eggs are cooled.  This stops the cooking process and prevent the yolk from getting that ugly blue edge.  When cooled, to peel, snap the egg on the counter light to mush the shell, then roll with slight pressure to lift the shell from the egg.  Sometimes it even will come off in one piece if you start peeling from the fat end where the air bubble is.  And for this my parents paid thousands.

IF you start from the bottom of the egg when peeling the shell off, its usually easier.

I also do the cold water, bring to a boil, then turn the heat off, cover and let sit 22-25 minutes. I hate when the shells don't come off good and I'm trying to make deviled eggs. If I'm making egg salad, it doesn't matter as much.

I know a tip add salt to the boiling water that helps eggs from cracking when boiling
