What do you like in your omelet?

I like a mushroom and cheese omlet. I haven't had one in awhile though. I like to go to IHOP for my omlet's

If I make one at home, I will usually mix up the eggs, cooked sausage and shredded cheese.  If I have some msurooms, I will put them in, along with a little green pepper.  I know someone who does the egg and meat and then puts strips of cheese on top as it is finished.  You can buy already cooked sausage crumbles and they work great in an omelet or on a homemade pizza.

Wow!  A big variety here.  Lots of spinach lovers.  I also love spinach, but have never thought of cooking it in an omelet.  I have lots of new ideas now.

Whenever I have a omelet, I always put green pepper, red pepper, mushrooms,onion, sausage mostly and of course the eggs.

MMM mushrooms lol, I usually just have cheese in mine and smother it with salsa. With 4 kids its quick and easy and I don't have to worry about getting anything mixed up!

Oh, there are so many good suggestions in this thread, making me hungry!
I've always liked the simple cheese omelet. Since I'm trying to be healthy, I cook it with a little olive olive in the pan instead of butter. And a nice piece of toast or a toasted tortilla on the side.

It depends if I am having it for breakfast or dinner.  For breakfast, it's the usual: cheese, onions, sausage or bacon.  For dinner: tomatoes, onions, chopped ham, bell pepper, mushrooms.  Oh man, I need to go shopping!
