I'm going off to college soon and will be living on my own and will be cooking for myself, so I was wondering if any of you guys have any good and possibly easy recipes to share.   :)

Good timing - I just found this tonight and it sounds really easy.  Plus lots of left overs great for a student.

EASY MACARONI AND CHEESE
 
2 1/2 c. uncooked macaroni
1 (13 oz.) pkg. Cracker Barrel sharp Cheddar grated cheese
3 tbsp. butter
Salt and pepper to taste
1 qt. milk
Preheat oven to 350. Melt butter in casserole in oven. Remove and add macaroni, stir well to coat macaroni. Add salt and pepper and grated cheese. Mix well. Pour milk over top. DO NOT STIR! Do not stir during baking. Place in 350 oven and bake one hour

BBQ Chicken

Take chicken parts, legs, thighs, etc. whatever you want. Remove all the skin and fat. Lay foil down in a pan, place chicken on foil. Cover completely with bbq sauce, underneath and over the chicken. Bake until done, 45 minutes to an hour. Drain all the grease off. pour bbq sauce on chicken again, just enough to cover, put back in over till cooked. If you have a broiler in oven, you may also use this to set the bbq sauce.

Lasagna

Brown ground meat and onions. Cook till brown. Boil Lasagna noodels in 6-8 cups salted water. Drain hamburger and onions, pour in 5 cans of tomato sauce, season with salt and pepper and garlic powder.(you may also add italian seasoning).

Drain lasagna noodles, heat oven to 350-400, place noodles in rows across by 3 or 4, depending on length of pan. Cover with 1/3 sauce and meat, then cover with 1/3 container of cottage cheese, then sprinkle with mozzarella, continue this step to create 3 to 4 rows high, sprinkling more mozzarella cheese on top.

Bake until cheese is completely melted.

This is delicious!!

Do a search for crock pot meals, you can start them before going to class and have it ready for the evening.  Then you would also have some leftovers to take for lunch the rest of the week.  You can then also use the leftovers to make other dishes for other meals.  There are also cookbooks for the crock pot (slow pot cookers).

This is the EASIEST recipe and is a BIG crowd pleaser!

1 (15 ounce) can whole kernel corn, drained
2 (14.5 ounce) cans chicken broth
1 (10 ounce) can chunk chicken
1 (15 ounce) can black beans
1 (10 ounce) can diced tomatoes with green chile peppers, drained
Directions

Open the cans of corn, chicken broth, chunk chicken, black beans, and diced tomatoes with green chilies. Pour everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through.


**Note: I like to use chicken *bleep* because canned chicken kind of creeps me out.  Also, I serve it with crushed tortilla chips, cheese, and sour cream.  I even did frozen limeade with it once. Super easy and it will feed everyone in your dorm! :)

Chicken *bleep*, boneless, skinless

Oven or stove top.
Sprinkle with seasoned salt, a little butter on each one, cook about 30 min.
You can do so much with it, add garlic, sweet & sour sauce, salsa, honey...

Depending on how you make it you can serve with rice or pasta. Make a chicken sandwich.

Same for pork chops, season and pop in the oven...again spice it up with whatever you like.

The secret for oven cooking meat is low and slow, cover with foil.

im not sure of the recipe. i just google it when i make it but chicken fiesta is SO good. i make it all the time at school!

Great suggestion on the crock pot.  I have been cooking that way for years in order to have a hot meal when I got home from work aftering picking my son up from school.  Now I like to cook in my crockpot because I can throw everything in the crockpot in the morning and have dinner done at the end of the day (when I'm more tired).

I have crockpot cook books, but what I use most consistently is the Internet.  I look at what I have in the cupboard, fridge, freezer, see what I'm in the mood for and then put the major ingredients in a search and see what recipes come up.  Works great and I have gotten recipes this way that are keepers!

Toad in the Hole Recipe
Easy College Recipe for a group of mates!
The perfect Toad in the hole recipe:

Serves 4

8 Quality Large Pork Sausages
110g (4oz) Plain White Flour
1 Table spoon of Wholegrain Mustard
300ml (½ pint) Milk
2 Small Eggs
½ tsp Salt

1) Place the flour in a bowl, then make a well in the centre and break in the egg,
then mix in half the milk using a spoon, continue until smooth then add the remaining milk and a table spoon of mustard.

Meanwhile - preheat the oven to 230°C; 450°F: Gas 8 and leave the dish in the oven empty to heat.

2) Beat or whisk the mixture until fully combined and the surface is covered with tiny bubbles. Allow to rest for 15 to 30 minutes, whisk again before use.

3) Fry the sausages in a pan to lightly colour and remove excess fat, reserve the fat. Alternatively, add the sausages to the hot pan with oil/fat in the oven for a few minutes to save on washing up!

4) Place the fat in a small dish tin adding a little oil, if needed, to bring the amount of fat up to about 4 tbsp. Heat the fat until smoking hot then pour in the batter. Add the sausage chunks to the dish and place into the hot oven.

5) Bake for about 5-10 minutes at 230°C; 450°F: Gas 8, then reduce to 200°C; 400°F: Gas 6 and bake 20 to 30 minutes or until the batter around the sausages has risen and is a deep golden brown.

Serve immediately with vegetables and a nice onion gravy.
