I like pepper jack too but my favorite is goat cheese. I love to sprinkle it on salads. My other favorite would be mozzarella because I use it a lot while cooking.

It's easier for me to list my least favorite cheese, which by the way, is blue cheese.   I love all kinds of cheese.  I enjoy going to stores where they let you sample different kinds that you may not have had before.   Love, love, love cheese.

I like all cheese, and we are so lucky because  there is a cheese factory here in town. It is called the Tucumcari Cheese Factory.  When you buy thier chedder cheese  and compare it to the store bought, it comes out way the best.  Nothing like fresh cheese. I buy it by the 3 lb. brick and then come home and shred it and then freeze it.   chedder  pepper and garlic is so good.  They  ship it all over the united States. We go about once a week and buy small batches of different cheese also.

I favor so many types and varieties of cheese it is difficult to pick one. However a favorite from my childhood would be Danish Blue! It definitely has an acquired taste but it's one that I've really taken to. My other favorite (sorry I fail to remember the name) is a white cheese with chopped apricots. Cheese and fruits go really well together. I remember my grandfather treating himself to a golden delicious apple and chopped cheddar cheese every day. I used to watch him assemble his stack of apple and cheese whenever we went to see him and I found the event quite mesmerizing.

Depends upon what I am eating it with or what kind of sandwich I am making.  I like white american for grilled cheese.  But to be hones I like just about any kind of cheese.
