Not sure today.....lacking imagination.

Probably eggs, as they are healthy, don't have to feel guilty, and I don't have to worry about thinking too much today.

I am back on a strict meal plan, so my dinner will be quinoa, thai peanut chicken breast, & steamed broccoli.   This was also my lunch....  and will be tomorrow's dinner as well.

pancakes and bacon.  My daughter had her friends over, so I had 3 teenagers to feed.  Didn't think I'd ever get done flipping!

We had waffles and fried spam.  Every once in a while I get a craving for spam, we used to have a lot when I was a kid.

I had a potato grande. It's a baked potato topped with taco meat, shredded cheese and queso. It is one of my favorite meals to eat so I thoroughly enjoyed it.

I am thinking tonight we are going to do meatball subs with fries.  A few of our favorite shows will be on tonight and I want an easy night in the kitchen.  Easy meal.  Easy clean-up.

Tonight will probably be left over Chicken Parmesan with Spaghetti and sauce that I made last night.  The hubby did not eat last night so that will be his dinner tonight.  Luckily I made 3 pieces of chicken so there is an extra piece for me to have again tonight as well.  It came out extremely yummy.
