With just the two of us, when I make a casserole I always make  those that I can  put part of it in the freezer and heat it up  at a later day.  Even do it with soups. When I cook  for the team at the charity where I work, I  always  have some left over for a couple of meals later for us. One we eat when we come home for dinner and the other goes into the freezer.  I may spend a lot of money when I do major shopping, but in the long run I save quite a bit even with the drive  (80-165 miles depending where we go)  Our grocery store is so over priced it is unreal.  But my freezer is full and so is my pantry again. I always divide the meat up into smaller portions and  wrap with freezer paper.  It is waste not want not.  Think and plan ahead.

In Minnesota we call them a  "hotdish"  (casserole) .  Do you like them ? I love tater tot casserole, lasagna, tuna, and good old fashion goulash, Do you have a favorite ??

Our family has Two favorite hot dishes....Yes I am from Minnesota!
1.  Russian Chow Mein (Our family calls this one "Daddy's Favorite Hot Dish)
 1 lb hamburger
 1 onion, chopped
 1 can water chestnuts (or can sub bamboo shoots)
 1 can mushrooms
 1 large can Chicken with Rice Soup
 1 can Cream of Mushroom Soup
 1 cup rice
 1 soup can water
 3 T. soy sauce

Brown hamburger and onions.  Drain any fat.  Combine all in a casserole baking dish.  Bake 1 hour at 350 degrees uncovered.   Can serve with chow mein noodles.

2.  Hamburger Corn Noodle Hot Dish  ( we call this one Diana's Favorite Hot Dish)
1 lb hamburger
1 onion
1 can corn, drained
1 cup egg noodles, cooked and drained.
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup sour cream

Brown hamburger and onion.  Drain.  Mix all together in casserole baking dish.  Bake 1 hour.

Lasagna without the ricotta (hubby doesn't like it), but i use 3 cheeses and pepperoni in mine and Shepard's Pie is ours. i also make a casserole with smoked deer sausage, onions and potatoes, but it's been a terrible year for deer (none in the freezer), so I won't be making that until next winter. I make Tuna Noodle casserole once every couple years. I like it, he tolerates it. :)

Yes I tuna casserole/hot dish, that's the bomb.  Now I am getting hungry for that, I better make that after easter!

My sister gave me a recipe a few years ago for a Chinese casserole that is soooo good.  I make it but not on a regular basis; mainly because I forget about it.  We like lasagna too and sheppards pie.

Hamburger Casserole is also a good easy casserole to try.  It's delicious!

The best kind of casserole I have ever had is the one that I did not plan but threw in what ever I had in the frig stirred together with cream of chicken soup
