Slow Coooker Recipes

If anyone has any recipes they would like to share, please do!! I have a few I will post here that are easy to do!!

Easy Shredded Chicken and Stock (this is a bulk recipe!!)

3-4 lbs boneless, skinless chicken breast
Salt and pepper to taste, optional

Place chicken in a 5-7 qt crockpot insert. Season if desired. Turn on Low and cook 6-8 hours or High 4-6 hours. Check internal temperature with thermometer. It should read 165F. Remove chicken and shred with 2 forks, OR using a handheld mixer, carefully, shred on high speed.

Note: There is no need to add liquid because the chicken will make it's own "stock". You can also freeze the stock from this. Just pour into a bowl and set in a bigger bowl of ice water. Stir the stock constantly till cool. Place in freezer safe bowl and freeze.

Lazy Day Chicken and Rice (this one is a favorite!!)

2 lbs boneless, skinless chicken *bleep* or fillets
2 cans cream of chicken soup
Salt and Pepper to taste
Other seasonings as desired, optional
1 lb long grain rice
1 can water

Spray 5 qt insert with cooking spray or use paper towel with oil to coat inside. Pour one can soup into bottom of insert and spread out. Place some of the chicken over soup. Sprinkle with salt, pepper and other seasonings as desired. Layer more chicken and season as needed. Mix remaining soup, rice and water. Pour over top of chicken. Heat on Low 6-8 hours or High 4-6 hours.

Note: I usually put the rice on top so it will not burn! On occasion, it still does. Make sure you mix it well with the soup and water before you put it in! I have also done this before where I mixed all the soup, rice and water, and the bottom layer partially burned and got mushy while the top didn't cook at all. Another option is to cut up your chicken and just mix everything thoroughly in the insert. You MAY need to add a little more liquid at the end and turn heat on High for about 30 minutes.
