I have one. I think it's a 6 qt. size, but it's over 20 years old and the insert is cracked halfway through. It's going to be a mess when it totally cracks, but....
I use it mainly for roasts and stuffed peppers. I tried chicken and it was horrible! It was like rubber. Bad enough hubby doesn't like chicken but that night, it was a throwaway meal.
I don't do sides in it either. In fact, I'm lucky if I use it once a week. It's heavy and it's getting hard for me to get it on the counter.
I have a couple Nesco roasters and they can slow cook, too. So, when the crock pot goes, I'll be using the smaller 5 qt. Nesco then.
I've made chicken in mine several times. One of the things I make is shredded chicken for various meals. I put in large package of chicken breast, let it go for 6-8 hours, and ten shred it! I've also made Chicken and Dumplings, Whole Chickens, and some other meals. Would you like some of the recipes I have? I was using my mom's before I got the newer ones and she got her's in 1977!
I have one and its the large size. I rarely ever use it just never got into making much in it but I want to get a smaller one because there are only two of us and maybe try to get in the habit of making stuff ahead.
It really comes in handy for making a lot of meals. There are 3 of us in my family and I will make a large meal and then portion it out and freeze. The other day I used both to make some meals and then dinner. Yesterday, I made what I thought was going to be a fail, Mac and Cheese recipe, and I made BBQ Pork ribs for my dad. I had A LOT left over because I ended up making a box mac and cheese instead. The problem was, the recipes said to cook it for 2 1/2-3 hours on LOW, I did that, and had to crank it up on HIGH for 4 more hours!!
They're a great idea for a low involvement meal if you're not in a hurry. 
I like to put pre-braised pork chops in with some mushroom soup, a little milk and maybe some rice. It makes a nice one-dish meal.
I've been taking time out enough to put stuff in a Gallon sized bag and freezing it. Then when I want it, I put it down to thaw over night, then that morning, right into the Slow Cooker!! There are a lot of e-books and websites now with this idea in mind. I have come across a lot of wonderful recipes!!
I love my crockpot. We especially like roast beef made in it.
In the fall, I also use my crockpots to make apple butter.....so much easier than cooking the applesauce on the stove top.
