Today is the day to appreciate our canned goods. Do you like to buy them at the store rather than homemade canning. What kind of equipment do you have for home canning?  Do you think about how you store the food filled/finished sealed jars, in a vacuumed sealed bag for storage or keep them on a shelf in a cool dark room? My favorite is Cucumber and Onion Relish. Which do you prefer to eat or make, the chutneys, relishes, chow-chow, preserves, or for long life preservation just in case Doom's Day Prepers, Znation or Last Man on Earth TV shows come true? Have a gr8 day, wish you only happiness and health.  :present:

AGREED This is true this day should have been earlier. Has any one canned eggs?

Seems a little late, since the growing season is pretty much over and the produce that was harvested should have already been canned or frozen. But maybe whoever started this day was too busy canning earlier in the fall, so decided to wait until the canning was over to start celebrating the canning. I like to can tomatoes since I prefer their taste coming out of a glass jar than I do coming out of a metal can from the store; partially because the store's canned tomatoes are very salty (not good for a diabetic) and also because they can sometimes taste metallic from the tomatoes acids eating away at the metal.

I started canning a couple of months ago. first it was a case of peaches my sister bought for dad. Then a neighbor gave us a bushel of apples. Then along came another neighbor who picked up tomatoes in Co. Brought me 3 cases. Canned 62 pints from it. Then a pear tree of my sisters needed picked and canned.  I canned 91 pints there.  And ran out of jars and nary another case to be bought. So dad will pick me up another couple of cases out  of town if found. As I have enough pears in the freezer to make a couple of cases of pear butter and also have fruit worked up ready to go for jellies in the freezer and canned in quart jars. So canning won't be over for me for awhile.
