We see how Sodom-&-Gomorrah (doomed cities) could've been saved by just a few righteous citizens, but why doesn't Jesus think that your whole body could be saved if it's mostly-good with just one evil part?

Mostly-bad is safe, but mostly-good is doomed to Hell?

Jesus is using hyperbole to make a point.Just as a little cancer can spread,so can "a little" sin.Better to cut off the offending appendage than let the sickness poison you entirely.

But wouldn't it be better just to starve the cancer & restore the healthy appendage?

Oh, but I see what Jesus was sort of saying: if your hand or eye makes you sin, your WHOLE BODY will be guilty of it. (Just like--if bin Laden had claimed to be 'with Iran or Afghanistan or Iraq or ... France--America would've been 'at war with that whole country' even though most of `em had nothing to do with it).

The analogy Christ is making is to STOP the sin in your life before it gets control over you.If you know you have a weakness,don't encourage it.(I.E. A recovering alcoholic shouldn't have a bottle of Scotch in the cupboard and so forth)
