What Makes an Animal 'Unclean'?

As Noah loaded up the Ark, the Bible tells us that he was instructed to load a larger number of clean-animals than unclean-. What was meant by this, before the writing of Levitical law?

Asking around, I gather/deduce that the 'unclean' animals were those which made people sick when they tried to eat them.

Do you know different?

Humans are the unclean animals. It is not that hard to figure out. ::) ::)

Because I'm not so-much 'trying to find out' as I'm 'agreeing with what we all know' ... or something like that. or not. ;)
