When I went to the university, I took the opportunity to take some classes in subjects that were not in my major that I found interesting.

I took a cultural anthropology class and a cultural geography class.
Took some Soviet studies.
Joined the campus ballroom club and found out I was really good at it.
Took some other dance classes to try the different styles.
Joined the band to keep playing my clarinet.
Tried out some of the outdoors clubs to explore the area around campus.
Took Russian language classes (took Spanish in high school, but when the university classes were filled, I heard someone took Russian and I thought that would be interesting to learn).
Participated in some campus charity run/walks.
Got season tickets to attend our football games one year, and hockey games the next.
Took astronomy classes as I've always liked space studies.
Got an undergrad student job working at the campus Space Physics lab.
Took some computer programming classes (learned basics of Pascal and C).

My major was originally just Physics, but then I took so many of the math electives because I found them interesting, I ended up double majoring by picking up an Applied Mathematics degree.

Look around at the various clubs and classes being offered.  If there is something that interests you, sign up for it to give it a try.  Once you graduate, it gets harder to pick up "side" learning like that.
