VERY rare - really really red in the middle (no pink thank you), nice dark charcoal look on the outside, with lots of juice running out when you cut it. 
    They're SO juicy and tender that way.

I WILL eat medium rare (if I have to) IF it's more towards the rare and less towards the medium. But I prefer not :angry7: to eat steak cooked any way other than very rare

We tried a "new cut" of steak this year....called sirloin strip steak.
They're cut from the tenderest part of the sirloin steak, and they are "strip" shaped, but generally pretty big and thick.

OMG - These sirloin strip steaks are so tender and juicy, they almost melt in your mouth, and they also have an outstanding flavor.

Used to I always liked it from medium to well done but since I don't eat red meat anymore, I don't like it anyway you cook it.

I like mine medium well, done enough to know it's thoroughly cooked but not dried out.

I prefer my steaks medium, just past medium rare. The problem is when I ask for medium at the restaurant they always over cook my steak. So now I ask for a medium rare. Sometimes, if its a good chef, my steak really is medium rare. In those cases, I eat it anyway! I know if I send it back they will only over cook it.

I know I'm not the only one with this problem.
