Recipe For Macbous Rubyan (Rice with Shrimp)
2 cups basmati rice or white rice
2 large onions chopped
6 cloves garlic chopped
4 tablespoon ghee (butter)
2.2 pounds shrimp, shelled
2 teaspoon curry powder
2 cinnamon sticks
2 bay leaves
1 teaspoon cardamom, ground
4 tomatoes, peeled and chopped
1/4 cup coriander leaves chopped
A pinch of salt
1/4 teaspoon black pepper, ground
1 teaspoon turmeric
1 1/2 cups water
1/2 cup almonds

How to make Macbous Rubyan (Rice with Shrimp)
Soak rice. Fry onions and garlic in ghee (butter) in a large pan until golden brown. Add shrimp, curry powder, cinnamon, bay leaves and cardamom. Cook until the shrimp become opaque in color. Remove half of the shrimp and keep aside. To the pan add tomatoes, coriander, salt and pepper and turmeric.
Stir over heat for 5 minutes. Add water. Bring to a boil and then simmer for 3 to 5 minutes. Drain rice, and stir into sauce.
Bring to a boil, and simmer for 10 minutes. Cover tightly, and simmer over low heat for another 25-30 minutes or until rice is cooked. Boil almonds. Remove their shells, and halve. Fry until golden brown. Serve the rice on a large platter. Add reserved shrimp and fried almonds to garnish.
