I love breakfast - my day is always off when I get distracted and don't have breakfast. I usually alternate between a hot egg based breakfast (scrambled, over easy, soft boiled), a cereal based breakfast (typically cold cereal with fruit or oatmeal with raisins), or pancake/waffle breakfast topped with fruit. I have some sort of fruit most breakfasts. Always have a cup of coffee. Sometimes with the eggs, I'll have a slice of whole wheat toast with peanut butter.
One oatmeal dish I used to eat was oatmeal mixed with some cottage cheese, almond slivers and cinnamon (warm it up a bit after adding in the cottage cheese). I got that out of a fitness book and on paper it sounded bad, but was really tasty. The texture was what I needed to get used to - was a bit like tapioca pudding...which was okay because I like tapioca!
I'd recommend if one is trying to lose weight - don't cut back on breakfast. You have all day to burn off those calories. It's best to cut back on dinner as most people don't have a lot of physical activities at the end of the day to burn those calories. Also, a bigger breakfast helps stave off late morning/mid-afternoon munchies.
