What do I mean when I say "the russet potatoes were replaced by the white potatoes?"

Russert potatoes are reddish in color.  Better for baking. White  are better for making a salad.  At least I think. Never heard of the Russert being replaced by white.

I have never tried to figure out the difference.  I use them interchangeably.  I know that is bad.

Do you maybe mean the thick-skinned white potato called russet that is often used for baked potatoes and French fries were replaced by another white potato with a thinner skin?
