I've never had anything more exotic, but I'm not against trying them.  I've just never had the opportunity to try them.

I've only had chickens as pets, so I can't comment on how easy it is to raise the other types.

I don't think I could ever eat a duck. I had a pet duck when I was kid, and she was really awesome. I love geese too, even though there are some mean ones out there (and geese can get frighteningly mean, but so can ducks I guess). I've had Cornish game hen before a long ago, don't remember how it tasted but pretty sure it's pretty much just a tiny version of a chicken. I could never eat an emu, never. I don't think I could ever eat ostrich either. Or really any other fowl. I don't even eat chicken much either. Same goes for every other type of meats. I'm not a big meat eater, but since I do eat meat I'm not a vegetarian either I just am quite limited on the amount of meat I will consume.
