Favorite Holiday Recipes

With Thanksgiving around the corner I wanted to share a favorite holiday recipe.  I'm a big fan of sweet potatoes...so...here we go!

Sweet Potato Casserole

6 Sweet potatoes
3/4 c. white sugar
1/2 c. milk
1/2 c. melted butter
1 tsp. vanilla
2 beaten eggs
1 tsp. cinnamon
1/2 tsp. salt

Topping

1 c. dark brown sugar
1/3 c. melted butter
1 c. chopped walnuts or pecans

Preheat oven to 425 degrees.  Bake sweet potatoes for 45 min. to an hour and allow them to cool.  Remove skins. Reduce heat to 350 degrees.  Grease or butter a 2 quart casserole dish.  Mash sweet potatoes until smooth.   Add sugar, milk, butter, vanilla, eggs, cinnamon and salt.  Mix well and pour into the casserole dish.

Mix together topping ingredients and sprinkle over potato mixture.  Bake for 40 minutes.
