yes eggplant is yummy. althou i fried it in oil and i wont ever do that again.

Try making eggplant parmesean. It's a delicious way to incorporate some eggplant into your diet.

Yes, It is very good.  Eggplant parmesan.  I will be planting eggplant in my garden again next year.

I actually tried eggplant for the first time some months ago and i really liked it even though I thought that I wasn't going to.  It shows that you can judge something by how it looks you just have to try it and then make your conclusion thereafter.

I love eggplant, especially Japanese eggplant (softer skin). In fact we grow Japanese eggplant in our garden. The season is done so I miss harvesting them...
I'm Japanese and we eat lots of eggplant. I like tempura eggplant, grilled eggplant, egg plant miso soup, egg plant pickle (not sour one, japanese style pickles are salty), eggplant permesan and can't forget...ratatoulle!

Eggplant is only really good if you eat it before it has seeds. Once the seeds have started to form, it'll have a bitter taste. the older the seeds, the more bitter. Its also got a very soft texture when cooked. I like it, and my family eats it all the time, since we have a great big eggplant plant in our back yard this year.
