Potluck recipes...

Today my neighbor invited me to a neighborhood potluck they are hosting this Saturday (all the neighbors and kids too) and said to show up and bring "a dish to pass".  I've only been to ONE potluck in my life where my recipe began with a store-bought pound cake and required putting holes through the cake and adding pudding, topping, etc.  It was such a disaster (when the cake was cut, pudding poured out and a few of the guys laughed until they were crying)... ::) so that was the end of that for me.  Does anyone have an EASY but GOOD recipe that they would recommend me to take?  (Some of the neighbors are going to be taking turns hosting these potlucks so I'll be needing more than one good recipe and I'll try to get recipes of "good stuff" when I'm there to post back here later.)

PAUL BUNYON BEANS and BACON
(found that the below brands work the best)
Large can of Bushes baked bean...ORGINAL RECIPE
1 lb of bacon
1 cup of sugar
1 cup Masterpeice BBQ sauce
1/2 cinnemon


Cook the beans on stove on your lowest setting for about 45 min...
at the 30 min mark for beans seperate out your bacon onto a metal tray and broil them in the oven for about 13 mins...
should be nice and crisp.
cut the bacon up...
add the bacon; sugar; bbq; and cinimon to the beans...stir well
let cook about another 30 min!

Jello salads are pretty easy:

1 pkg jello (flavor of choice, I typically choose lime, orange or strawberry - depending on fruit ingredient)
1 can fruit (I use pineapple chunks with lime, Mandarin oranges with orange, mixed fruit cup with strawberry - or you choose what you think would be good)
1 tub Cool-Whip (8oz I believe, not the tiny, not the large - the medium size)
1 pkg miniature marshmallows

Mix everything together in a bowl, put into a serving dish and chill for about an hour - enough to let it set.

It's summer so this may not be as popular but corned beef and cabbage does super well in a crock pot.
1. bottom of pot put potatoes cut in quarters 2. 4-5 carrots cut to about 3 inches in length 3. add one whole onion cut in rings 4. then the corned beef on top covered by water and packets of seasoning and let simmer on low for 8-10 hours. About 30 min before serving, take a whole cabbage and slice through with pieces about 4-5 inches and put in pot with the corned beef.

you could also pick up soda and chips! 

I do a mean crock pot mac & cheese -- google for the best recipes.

also rice krispy bars are very popular especially if there are kiddos going to be around

Taco Dip

It's easy and tastes good too.

In a casserole dish spread one package of softened cream cheese at the bottom.
On top of that spread a layer of salsa.
On top of that spread a can of refried beans.
Top with shredded cheese.

Heat until cheese is melted.  Serve with tortilla chips. 


Spinach artichoke dip

Chop a clove of garlic and a can of artichoke hearts.
Spread the garlic and artichoke mixture over softened block of cream cheese and added 1/4 cup Parmesan cheese.
Cook a block of froze spinach in microwave for 5 minutes
Cook the artichoke and cream cheese in microwave for 3 minutes
Added spinach and mixed it together and microwave for another minute.

Tasted good with fire roasted tomato Triscuits.

Velveeta-melt dips are pretty easy and are usually very popular. Basically its just Velveeta melted with other ingredients to make a dip for tortilla chips. Eg Velveeta and salsa, V and Hormel chili, etc. Velveeta instead of real cheese works the best for these because it melts much easier (and can be reheated for leftovers without getting oily). Just Google for actual recipes.

I've also brought a broccoli and grape salad a few times, which seems to go over fairly well, esp. for people that are trying to find healthy foods:

Salad
2 C broccoli flowers (basically 2 large heads of broc. chopped into bite-sized pieces)
2 C grapes, halved (either color; red grapes will bring more color to the dish, but green is a little sweeter. I like 1 C of each)
1/2 C onions, finely chopped
1 lbs. bacon, fried and crumbled (or one package of bacon crumbles salad topper; made with real bacon)
1/2 C toasted slivered almonds (or sunflower seeds work too)

Dressing
1 C mayonnaise (not Miracle Whip; Kraft makes some mayo with olive oil for a healthier version)
1/2 C sugar
1 tbsp cider vinegar

Directions
Mix broccoli, grapes, and onions together in a large bowl. In a separate bowl, mix dressing ingredients together until it is smooth. Fold the dressing into the salad. Chill for an hour.  :icon_rr: (I meant chill the salad) Before serving, fold in the bacon crumbles and almonds.

You guys should really try the bean meal its good/cheap and filling... best to make when you have a bunch of 6 foot plus 200lb plus guys around.
