Anyone have easy to make meal ideas?  I have 3 little ones and a picky eater for a husband (my fourth child).  Some tips on fast, healthy (???) and good meals.  I appreciate all the help I can get!

I have a few good recipes. You can email me at jo_rhea@yahoo.com and I will forward some on to you. I know what you mean about picky eaters! It makes it darn hard to come up with different meal ideas.

does your family like pasta ?  My husband and I eat a lot of different "healthy" pasta dishes .... some with no sauce but a little olive oil and some with creamy cheese sauce, etc.  I can post a few of those if you like.  I always want to have at least one vegetable with every meal and most times more than that and a salad.  You can add all kinds of ineresting things to salads like strawberries, nuts, grapes, pineapple, red peppers, apples..... It makes it a little special and always different.

I always try to have boneless skinless chicken *bleep*...grilled chicken sandwiches, cut into strips and coated in seasoned flour ( flour&seasoned salt) for chicken nuggets, baked with garlic cloves or sweet&sour sauce...
Ground Chuck for tacos, sloppy joes, mini-burgers, meatballs-Italian over pasta or Swedish over noodles...
All the sides for these are so easy mashed potatoes, fries, salad, fruit salad, potato salad, coleslaw.
Now I'm hungry...
Breakfast was always good for dinner once in a while, French toast and bacon or sausage was good with hash browns.

Tigerlilly01 - Thanks for the tips.  I usually only do things fried cause it seems to be so easy but not interesting or healthy.  We do eat a lot of pasta but I only have 2 different ways of making it either with chicken or shrimp with Alfredo sauce or with old fashion tomato sause and ground meat for meatballs.  I didn't know you could use fruit in a salad?  That seems really good and fun.  I'm gonna try it.  Do you plan out your meals or do you buy staples and just mix and match to your liking for the week.  I would love to get some more ideas thanks

jusu - I do a lot of frying and I know it is so unhealthy but its seem it's the only thing my family eats.  I was wondering what else you could do with chicken breast but my question is are all meat brands the same or what is the difference from on to the other other than price.  I have been buying store brand but it seems to settle wrong with us.  Thanks for the tips and please if you have any more ideas I would love for you to share.  Thanks

I try to plan meals in advance but it doesn't always work that way.  I do try to make extra when I am making spaghetti sauce or meatloaf, stuffed peppers, things that will freeze easily.

My favorite pasta dish is made with what ever pasta i have on hand like penne or bow tie pasta.... cook pasta & set aside.

cook boneless chicken *bleep* cut up into bite size pieces in a LITTLE olive oil or use left over chicken (i buy rotissere chicken from the store and use left overs for dishes like this).  Slice 2 zucchi's up and saute in a LITTLE oil with some onions and garlic... also use your favorite herbs like oregano, basil & rosemary, add chicken to mix then use some grape tomatoes cut in half and add just till hot.  Put in a couple handfuls of fresh parmesan and add this to the pasta.  Add in olive oil until it well mixed.  The olive oil is the sauce, use enough to make the dish moist.   It is wonderful with a salad and some thick bread toasted in the oven!

It is good to cook more chicken than you need so you can use it for chicken noodle soup or white chilli .....
I make a larger roast than needed and use left over for vegetable soup or stew .... or add bbq sauce and pull the meat to make bbq sandwiches.   I LOVE TO COOK.  Baking is my challenge.  I just baked a cake & it is too done.... and I am taking it to the in-laws for dessert.  :(

I have a great recipe for roast that my family loves. It is called mexican roast.

Mexican Roast
1 Beef Roast diced up into 1 inch pieces
1 can diced tomatoes with green chilies or 1 small can diced green chilies
1 large Salsa
1 garlic clove minced
Package of Flour Tortillas
1 can of Refried Beans
Mexican cheese mix or any cheese
Sour Cream
Put 1/2 to 3/4 of Salsa in the cooker with tomatoes with chilies (and juice) with roast and garlic the night before on low, in the morning put it on high, stir well, by 2 or 3 pm you will be able to pull the roast into shreds with a spoon, the meat will be done when there is no more liquid after shredding. When its time to eat, butter both sides of the Tortillas on wax paper. Put a line of cheese down the middle, then meat, and on top put the beans. Fold ends in first, then roll like a burrito. Place on a cookie sheet in the oven (preheated at 350°). Takes about 5 or so minutes until tortillas are browned. Serve with sour cream on top and salsa. Can also put in taco shells and you can do this with pork too.
