How about shish kabobs? Just marinate some pieces of steak, little potatoes, some mushrooms, and cherry tomatoes in an Italian dressing all afternoon, then put all the pieces on skewers and broil them. It's easy and tasty. You could serve
rice and a salad along with it for a complete meal.

Have you ever tried Cheesy Oat Burgers?  I found the recipe in a Cooking for Kids cookbook a few years ago and it became a fave.  I make them a few times a month, they are easy & budget friendly.

Cheesy Oat Burgers Recipe

1 cup grated cheddar cheese
1/4 cup green pepper, finely chopped
1 tomato, finely chopped
1 small onion, finely chopped
1 cup oats
2 egg, lightly beaten
1/3 cup plain flour
oil for frying

Method:
In a medium bowl, combine cheese,  pepper,  tomato, onion, oats, eggs and flour; mix well.  Divide mixture into 6 portions and shape into patties.

Heat oil in a large pan, add oat burgers and using a spatula turn over and cook other side.  Cook 3 minutes each side, or until oat burgers are golden. 

Serve on a bun with favorite toppings with salad.  Makes 6. 

Note:  I don't use alot of oil for frying.  Just a little so they don't stick to skillet.

(I usually put some plain Greek yogurt on the bun top instead of mayo, with some lettuce & tomato.  On the bottom half I add a slice of pickle, a small dab of ketchup & mustard and then a small dab of ranch dressing.)-- I've also sliced the oat burger and put them in tortillas with some shredded cheddar and ranch dressing.

The burgers are very versatile, you can use just about any kind of cheese & toppings to get a variety of inexpensive burgers.

Have you tried a Japanese restaurant or  a Japanese dish? Try oriental cuisine. you might find it very delicious and nutritious.
