« on: November 21, 2011, 03:53:27 am »
I made this for my hubby the other day and he LOVED it!  It is a very good bread for breakfast or dessert .... snack .... ;D ;D ;D

Maraschino Cherry Nut Bread ( makes a wonderful homemade gift. Everyone will enjoy this tasty quick bread.)

Ingredients:
   • 2 cups flour
   • 1 teaspoon baking soda
   • 1 teaspoon salt
   • 3/4 cup sugar
   • ---
   • 2 eggs
   • 1/2 cup butter, melted and cooled
   • 1 cup milk
   • 1 teaspoon vanilla or juice from cherry jar (I USE BOTH)
   • 1 cup chopped nuts*, lightly toasted ( walnuts, pecans, almonds, hazelnuts ... any unsalted nuts) IF YOU USE SALTED NUTS LEAVE OUT THE SALT IN RECIPE.
   • 10 ounce jar (apprx. 1 cup) chopped maraschino cherries
Preparation:
Preheat oven to 350 degrees F. Grease and flour one 8-inch by 4-inch.  Combine the first set of ingredients in large bowl with wire whisk. In smaller bowl, combine second set of ingredients. Add wet ingredients to dry. Only mix until moistened. Carefully, stir in nuts and cherries. Spoon into prepared pans.

Bake 55 - 60 minutes. Bake mini pans for 45 minutes.

This sounds delicious!

I like to give homemade gifts for Christmas.  This one sounds like it could be another one to add to my list!
