How are you frying them? In a pan with butter or deep frying? I have different batters/coatings depending on which way you are cooking them. A good one for pan frying is to crunch up Funyuns into crumbs, dip fish in beaten eggs then roll in the crushed funyuns and fry in butter.
I use a beer batter for deep frying -
Beer Batter

¾ cup flour
2 teaspoon baking powder
2 tablespoons sugar (heaping or 1 extra if you like a little sweeter)
1 egg
Dash of salt
Add beer to desired consistency (about ½ can)

Just a few tips on frying fish. Because it is so moist and flaky a good drench in flour will hold the coating better so it doesn't pull away from the fillet. If you like to add a little spice/flavor to the coating, try a creole seasoning, seasoned salt or the lemon pepper mix...anything you like really. Don't forget coleslaw, hush-puppies and a good tartar sauce. What time should we be there?

Thanks for the recipe.  Just moved to OH and started fishing.  What are you catching them on?  Spend the evening catching nightcrawlers.....I know catfish love them but do bass and bluegill?

@lberry I have been catching them on pumpkin colored "baby brushogs", pumpking color with chartruse tail liziards and spinner baits. I have had a blast catching them this spring. What brought you to Ohio?

@ lberry A hushpuppy is round like a golf ball and is made of corn meal, corn bits, onions and anything elsr you want to put in them. They are awesome.
